3 medium-large organic garnet yams
2 limes,  juice and zested
1 tsp corriander seeds, crushed
2 tsp cracked black pepper
2 tsp fresh tumeric, grated (you can substitute 3 tsp tumeric powder)
1 tsp  ground cumin
1 tsp garlic powder
2 tsp onion powder
1 Tbsp chilli flakes
2 tsp Cetic grey salt or sea salt
2 Tbsps coconut oil
4 cloves garlic, minced – I love garlic so I use four cloves but you can scale back to your preference

  1. Preheat oven to 350°
  2. Wash the yams thoroughly removing any spouted areas with a pairing knife
  3. Slice potatoes  to approximately ½  – ¾ inch rounds
  4. Juice and zest the limes and peel and mince the garlic
  5. In a large bowl, combine all of the spices, garlic,  ½ of the coconut oil, lime zest and lime juice
  6. Add yams to the bowl and coat evenly with the spice mixture. I like to use my hands and really get in there but you can also use a spatula
  7. Spread the yams evenly on a large, parchment lined cookie sheet
  8. Bake for 60 minutes, turning them halway through the baking process
  9. Once baked,  brush potatoes with remaining coconut oil and broil for 3 – minutes for alittel extra crisp on the edges
  10. Let cool and enjoy!
